Fall is here. It’s time for orange and brown and red and yellow. I love it! Fall for me means a change in color, food and focus. Right now I’m thinking sweaters, the fireplace and lots of squash, cinnamon, apples and such. I found this recipe on With Style and Grace, one of my favorite blogs. I’m trying it tonight!
- 1 apple, red or green
- 3 1/2 tablespoon gluten-free oats
- 1 tablespoon maple syrup
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon, plus more for sprinkling
Preheat oven 350 degrees F.
Cut the apple in half and core out the middle.
In a small bowl, mix together oats, maple syrup, brown sugar and cinnamon.
Divide mixture evenly among the apple halves, placing in the center. Place apple halves on a baking sheet – cut side up, sprinkle with a little cinnamon and bake for 25-35 minutes.
Remove and seve with a nice scoop of vanilla ice cream – regular or dairy-free.
Oct 2,2012 The Perfect Menu
I’ve been searching for the perfect menu. A friend and I started a book club and one of the most important aspects of the book club is the dinner that each host gets to prepare for the group. We rotate homes and it will be my turn soon. There are a handful of favorite food blogs I’ve been visiting regularly. I think I’ve found at least 12 entrees. How do I bring it down to one? And the breads and the soups and the salads! It’s a bit overwhelming. For now, I’ll just peruse the blogs and hopefully figure it out soon.
